Beer Battered Fish

A beautiful fish fillet coated in a beer based batter, deep fried till golden. Served with a smooth pea puree and potato salad.
Ingredients :

For the fish:
-> 2 Tbsp yeast
-> Sugar, a pinch
-> 3 Tbsp flour
-> 1/4 th pint of beer
-> 1 fish fillet
-> Oil, to deep fry
-> Salt and pepper, to taste

For the potato salad:
-> 20-25 small potatoes
-> 7-8 beans, chopped
-> 2 spring onions, chopped
-> 2 tsp jalapeno juice
-> 3 chopped jalapenos
-> 6-7 chopped olives
-> 1 thinly sliced gherkin
-> 1/4th green pepper, chopped
-> 3 Tbsp mayonnaise
-> 2 tsp mustard
-> 1 tsp chopped chives
-> Picked parsley leaves
-> 1 tsp tarragon leaves, chopped
-> Salt and pepper, to taste
Beer Battered Fish
For the pea puree:
-> Quarter block of butter
-> 2 Tbsp chopped onions
-> 7-8 Tbsp frozen peas
-> 2 tsp vinegar
-> 7-8 mint leaves
-> Salt and pepper, to taste

Method :

For the fish:

-> Take yeast in a bowl and add a pinch of sugar and a little water. Put this mixture in the microwave for 5-6 seconds. Add 3 tbsp heaped flour, beer, salt and pepper to the mixture. Whisk it till it has a slightly thick consistency and let it rest for a few minutes.

-> Take the fish fillet and sprinkle a touch of salt on both sides. Dust with a little flour on both sides and dip it in the risen batter.

-> Fry in hot oil till it’s a golden brown on both sides.

For the potato salad:

-> Boil and peel the small potatoes. Put them in a bowl and add beans, spring onions, jalapeno juice, jalapenos, olives, gherkins, green pepper, mayonnaise, mustard, chives, parsley leaves and tarragon leaves.

-> Season with salt and pepper to taste.

-> Chill before serving.

For the pea puree:

-> Place butter in a pan. Add onions and peas. Season with salt and pepper to taste. Saute the mixture very lightly.

-> Put the mixture in a blender, add vinegar and blend.

-> Serve the fish with cold potato salad and fresh pea puree. Add slices of lemon and garnish with fresh parsley.
