    • 4 x 60g eggs
    • 125g low fat milk
    • 160g button mushrooms, sliced
    • ½ (20g) onion, finely chopped

    Mix eggs with milk and add salt and pepper to taste. Stir for some time so that it gets mixed well. Heat a small pan over medium heat. Drizzle olive oil and sauté onions until softened,around 5-6 minutes.
