Quick Pressure Cooker Chicken Curry

750 grams chicken on bone,cut into pieces
2 medium onions,grated
1/4 cup tomato puree
1 tspn pure ghee
1 tbspn chopped fresh coriander leaves+for garnishing
1 inch cinnamon
1/2 tbspn ginger paste
1/2 tbspn garlic paste
1 tbspn coriander powder
1/4 tspn turmeric powder
2-3 cloves
4-5 green cardamoms
1 tspn garam masala powder
1 tspn cumin powder
1 tspn red chilli powder
salt to taste
oil for cooking

Quick Pressure Cooker Chicken Curry1Method:
=>Heat ghee in a pressure cooker.Add green cardamoms,cloves and cinnamon and can add oil if required.
=> squeeze water from grated onion and add.mix and saute till onions are well browned.
=> Add garlic paste ,ginger paste.mix and saute well.
=> Add turmeric powder ,red chilli powder,coriander powder,cumin powder.mix well and saute well.
=> Add tomato puree and salt.mix well and cook for 2 minutes.
=>Add chicken and mix well.cook for about 3-4 mintes, mixing at intervals.
=>Add chopped coriander and mix well.Add 3/2 cups water and stir to mix. cover and pressure cook till 3 whistles.
=> switch off heat and let the pressure reduce completely.remove lid and add garam masala powder.mix well.
=> serve hot garnished with chopped coriander leaves.

Chicken Do Pyaaza

Chicken cooked in a variety of spices, yogurt and kasoori methi.
Ingredients :
=> 1 kg chicken
=> 2 onions
=> 2 tsp garlic paste
=> 1 tsp ginger paste
=> 1 Tbsp kasoori methi
=> 1 Tbsp red chilli powder
=> 1 1/2 Tbsp desi ghee
=> 2 1/2 tsp garlic and ginger paste
=> 2 tomatoes
=> 1 small cup yoghurt
=> 1 Tbsp turmeric powder
=> 1 Tbsp coriander powder
=> 1 tbsp cumin powder
=> 3 Tbsp cream
=> 1 Tbsp coriander leaves
=> 1 Tbsp mint leaves
=> 1 Tbsp chopped green chillies
=> Salt

For the Garam Masala:
=> 1 Tbsp green cardamom powder
=> 1 Tbsp mace powder
=> 1 Tbsp clove powder
=> 1 Tbsp cinnamon powder
=> 1/4 tsp black cardamom powder
Chicken Do Pyaaza

For Garam Masala:

=> Mix green cardamom powder, mace powder, clove powder, cinnamon powder and black cardamom powder.

For the Chicken:

=> Cut chicken into even size pieces and marinate with garlic paste, ginger paste, salt and some red chilli powder.

=> Finely chop one onion and cut the other into large pieces. Blend tomatoes to make a puree.

=> Heat desi ghee in a pan. Add garlic and ginger paste.

=> When it turns brown, add chopped onions and cook till it turns golden brown. Now add tomato puree and salt.

=> Take some yoghurt in a bowl, add turmeric and red chilli powder and mix it well. Add this mixture to the tomato puree and cook for some time.

=> Add coriander powder, cumin powder, the marinated chicken, the onion cut into large pieces, water and garam masala.

For Garnishing:

=> Heat cream, coriander leaves, mint leaves, green chillies and kasoori methi. Add to the chicken and serve hot.

Assamese Fish Curry

Assamese Fish Curry

A lip smacking fish curry with the flavours of mustard and marinated potatoes and tomatoes.

Ingredients :
-> 500 gm fresh fish (Rohu)
-> 5 potatoes, half boiled
-> 4 tomatoes
-> 1 Tbsp black mustard seeds
-> 1 Tbsp zeera
-> 4 Tbsp fish masala
-> 2 onions, finely chopped
-> 5 Tbsp turmeric powder
-> Salt, as per taste
-> 150 ml mustard oil
-> Coriander leaves
-> 4 green chillies


-> Marinate the fish with salt, turmeric powder, fish masala and 1 tbsp mustard oil. After 15 minutes fry the fish in mustard oil.

-> Marinate the half boiled potato with salt, turmeric powder and fry it until it gets golden brown.

-> Marinated the tomato with salt and turmeric and fry it in mustard oil.

-> Put 50 ml mustard oil in a hot pan, once the oil gets hot put 1 tbsp zeera, 1 tbsp mustard seeds, 4 chopped green chillies and finely chopped onion.
Assamese Fish Curry
-> Fry all this until it gets little brown, put 1/2 tbsp turmeric powder, 1 tbsp fish powder and salt.

-> Once this gets golden brown put the fried potato and tomato into the pan.

-> Fry it for 5 minutes, pour 2 cups of warm water, covered the pan n put it in seam for 3-4 minutes.

-> Put the fried fish into the pan. Keep it on for another 4-5 minutes.

-> The recipe is ready, serve the fish curry with freshly chopped coriander and green chillies.
